Syrup farmers begin tapping trees

Posted:

CADOTT (WKOW) -- For people in the maple syrup business it's already time to start collecting the sap from their trees.

Roth Sugar Bush in Cadott began tapping its trees Monday, but the mild weather could have an effect on business.

"It pretty much is determined by what the weather is when the time the sap runs. If you get the freezing nights and warm days when the sap is supposed to run, it will run. But if it goes from winter to summer, it won't run. You gotta have the freezing nights and warm days," said Pete Roth with Roth Sugar Bush.

You can start getting sap when the tree starts budding, usually April or May. But if the weather is warmer, there may be less sap to make the syrup. That could make the supply low, causing the prices to go up.
