World Championship Cheese Contest begins

Posted: Updated:
MADISON (WKOW) -- Judging at the World Championship Cheese Contest started Tuesday in Madison.

There are 25 U.S. judges and 25 international judges.

They'll be busy, trying all 2,600 entries over a day and a half at the Monona Terrace.

Chief Judge Emeritus Bill Schlinssog says it's not just all about taste.

"Is it as hard as it should be? Is it as soft as it should be? Is it sticky when it shouldn't be? Pasty?"

Of course, the judges do taste the cheese, but they don't eat it.

They just roll it around their mouths, then spit it out.

The event is free and open to the public Wednesday from 8:00am-5:00pm.

There is also The Champion Cheese Charity Event: A Benefit for Second Harvest.

That's Wednesday night from 6:30pm-9pm during the Championship round of judging.
