DODGEVILLE (WKOW) -- A coveted artisan cheese is back on store shelves just in time for the holiday season. A year ago, cheese lovers were lamenting the fact that cheesemaker Andy Hatch, Uplands Cheese Company in Dodgeville, was suspending production of his fall cheese, Rush Creek Reserve.
Last year, the FDA had been making some moves towards restricting the production of soft raw milk cheeses. As a precautionary measure, Hatch decided to suspend production of Rush Creek Reserve. But a year later, production is back.
Hatch says, "We had to disappoint a lot of people, we were disappointed. We missed making the cheese last year. So it feels really good this time to bring it back!"
The cheese hit stores just in time for Thanksgiving and will be available for holiday entertaining. Although the cheese is available online and at stores, quantities are limited.
