Holiday drinks and cocktails presented by VOM FASS

MADISON (WKOW) -- Just in time for the Holidays, our friend Chef Kevin Appleton from VOM FASS USA stopped by Wake Up Wisconsin to help us make some festive holiday drinks.

Chef Appleton who also teaches at Madison College shared the following recipes Monday morning.

Cranberry Orange Nut Biscotti

Yields about 36 biscotti

Ingredients:

4 large eggs

1 t. vanilla extract

Grated zest of 2 oranges

1/4 cup VOM FASS FassZination Hazelnut Oil

2 3/4 cups all-purpose flour

2 cups granulated sugar

1 t. baking powder

1/2 t. salt

1 2/3 cups (7 ounces) whole almonds, skin on

1 cup frozen whole cranberries

Preparation:

Preheat the oven to 325°F. Line 2 baking sheets with parchment paper.

Whisk together the whole eggs, yolks, vanilla, nut oil & citrus zest and set aside.

Combine the flour, sugar, baking powder and salt in the bowl of a stand mixer and mix on low speed with paddle attachment just until fully mixed. Mix in egg mixture until almost completely incorporated. Add the almonds and cranberries and mix just until the dough comes together. (Try not to over mix which will crush the almonds and cranberries.

Shape the dough into 3 logs on a lightly floured surface. Place the logs about 3" apart on a baking sheet with parchment paper. You'll likely need a second baking sheet for the third log.

Bake until light golden brown, about 30 minutes. Let cool on the pans to room temperature.

Reduce the oven temperature to 275°F.

Place the logs on a cutting board and slice crosswise about 1/2 inch thick. Place the slices, cut side up, on baking sheets and return to the oven. Bake until golden brown and dry, about 30 minutes. Let cool on the pan to room temperature.

Store in an airtight container.
