2 russet potatoes, peeled and mashed
1 russet potato, grated raw
¾ cup all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
¼ teaspoon nutmeg
½ cup buttermilk
½ cup vegetable oil

Mix all ingredients together except buttermilk-add just enough buttermilk to form a mixture the consistency of cooled mashed potatoes. Salt and pepper to taste.

Heat vegetable oil in a large (preferably cast-iron) skillet over medium heat. Scoop about ¼-1/2 cup of boxty at a time into skillet and flatten with spatula to form a round pancake. Cook about 3 minutes on each side or until brown and fluffy. Keep warm in low oven if necessary, depending on how many you are making at once. Serve with butter and brown bread.
